The crystallized&©|160;Disodium succinate&©|160;is white crystalline particles, and the anhydrate is a crystalline powder. Odorless, sour-free, with special shellfish flavor. The taste threshold was 0.03%. When it reaches 120 ¡ã C, it loses crystal water and is anhydrate. Soluble in water (35g/100ml, 25 ¡ã C), insoluble in ethanol. Stable in the air.
Application
Flavoring agent, sour agent, buffer. Mainly used in ham, sausage, aquatic products, seasoning liquid, etc. The general dosage is from 0.01% to 0.05%. As a seasoning, a powdery anhydrate is generally used to accelerate dissolution.
It is used in seasonings for instant noodles and convenience foods, with freshening and special flavor, and the dosage is about 0.5%. |
